Ingredients

  • 1 tablespoon of oil
  • 1 onion, thinly sliced
  • 2-3 teaspoons of fresh ginger, grated
  • 1-2 cloves of garlic
  • 1 pound of carrots, cut into half circles
  • 2 cups of vegetable broth
  • 1 cup of water
  • 2 sprigs of thyme
  • 2 teaspoons lemon juice
  • 1/4 cup Ripple Half & Half Original
  • 2-3 tablespoons of nutritional yeast
  • salt & pepper to taste

Method:

  1. In a large pot, sautée onions with oil until fragrant and translucent.
  2. Next, smash the garlic with the flat side of a knife and add into the pot, along with ginger and sauteé for another 2 minutes or so, until fragrant.
  3. Next add carrots and thyme and sautée for another 4-5 minutes.
  4. Add the vegetable broth, water and lemon juice and let boil until carrot pieces are soft enough to poke through easily with a fork.
  5. Pour contents of the pot into a high speed blender and blend on high until smooth. Alternatively, use a hand blender and pulse mixture inside the pot until desired consistency is reached.
  6. Add nutritional yeast and Ripple Half & Half and quickly blend again.
  7. Finally, season with salt and pepper, to taste.

In a large dutch oven over medium heat add the oil, garlic & onion. Cook until the garlic is fragrant, about 2 minutes….
