Chilled Pea and Pesto Soup

- 16 oz. bag of frozen sweet peas
- 1 tbsp. finely chopped shallot
- 1/4 c. water
- 1/4 c. reduced-fat sour cream
- 3 tbsp. pesto
- 1 c. cold water
- salt
- pepper
- 1 tsp. pesto
Directions

- Step 1Combine a 16 oz bag of frozen sweet peas, 1 tablespoon finely chopped shallot, and 1/4 cup water in small saucepan. Cook over medium heat, stirring occasionally, until peas are tender, about 4 minutes.
- Step 2Transfer mixture to blender and puree with 1/4 cup reduced-fat sour cream, 3 tablespoons pesto, and 1 cup cold water.
- Step 3Chill soup at least 2 hours and season to taste with salt and pepper.
- Step 4Ladle soup into 4 bowls and garnish each serving with 1 teaspoon pesto.
