  • 16 oz. bag of frozen sweet peas
  • 1 tbsp. finely chopped shallot
  • 1/4 c. water
  • 1/4 c. reduced-fat sour cream
  • 3 tbsp. pesto
  • 1 c. cold water
  • salt
  • pepper
  • 1 tsp. pesto

Directions

    1. Step 1Combine a 16 oz bag of frozen sweet peas, 1 tablespoon finely chopped shallot, and 1/4 cup water in small saucepan. Cook over medium heat, stirring occasionally, until peas are tender, about 4 minutes.
    2. Step 2Transfer mixture to blender and puree with 1/4 cup reduced-fat sour cream, 3 tablespoons pesto, and 1 cup cold water.
    3. Step 3Chill soup at least 2 hours and season to taste with salt and pepper.
    4. Step 4Ladle soup into 4 bowls and garnish each serving with 1 teaspoon pesto.
