Honeyed Carrot & Orange Soup
Ingredients:
- 2 tablespoons butter
- 1 1/2 pounds carrots, peeled and thinly sliced
- 2 large cloves garlic, minced
- 1 large yellow onion, chopped
- 2 cups vegetable or low sodium chicken stock
- 2 cups water
- juice of 4 medium oranges (roughly 4-5 tablespoons)
- 1 tablespoon honey
- creme fraiche, fat free sour cream or yogurt, to serve (optional)
- 2 tablespoons toasted cumin seeds, to serve (optional)
