Simple Vegan French Toast

I’m all about simple breakfasts. Not because I don’t like spending time in the kitchen–believe me, I do–but because I’m huuuuungry. I just don’t like waiting to eat breakfast in the morning if I can help it. That’s why this Simple Vegan French Toast is a keeper. It’s not only delicious, filling and sweet, it’s also so easy to make.
One thing I love to do for Brett is make him something warm for breakfast. He’s more than happy with yogurt and granola, but really loves and appreciates it when I make something a little more special. Last year around his birthday I kept experimenting with more “extravagant” breakfasts and ended up making my Pumpkin Cinnamon Rolls (which are amazing!) and this Pumpkin Cinnamon Raisin Bread Pudding. Both of those recipes are going to be family staples in our house, but they do take a bit more elbow grease (a.k.a. time) than your average breakfast.
Thats why this Simple Vegan French Toast is such a winner. Just last week I made it for our breakfast when we needed to be out the door in less than 25 minutes. Yes, we did have to do a little bit of food shoveling, but still. That’s pretty darn quick if I do say so myself!
Another thing I love about this recipe is that I can make it with any kind of sandwich bread I have in my kitchen. Many french toast recipes call for baguettes or some kind of fancy bread, but french toast is a lot more likely to happen when I don’t have to go out an get a certain kind of bread. Ingredients
- 8-10 slices of sandwich bread cut in half diagonally
- 2 cups non-dairy milk oat, almond, soy
- 2 tablespoons (heaping) ground flaxseed
- 1 tablespoon maple syrup
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
- 1 teaspoon nutritional yeast optional*
Instructions

Optional: If you have time, slightly toast the slices of sandwich bread in a toaster or under the broiler until lightly browned. Cut in half diagonally and set aside.In a medium sized bowl, whisk together the remaining ingredients and let sit for 3-5 minutes to thicken.

Heat a medium sized skillet over medium-low heat. Spray the pan with non-stick cooking spray or lightly coat with coconut oil. Dunk the slices of toasted sandwich bread into the milk mixture, making sure both sides get fully coated.

Place as many pieces as will fit on the heated skillet and let them cook for 3-5 minutes until starting to brown. Flip the slices over and cook on the opposite side until browned.Serve warm with pure maple syrup.
Notes
*I love the addition of nutritional yeast in this recipe! It gives the french toast a slightly eggy flavor.
