I wanted something more than cheese and crackers but less than a deli sandwich for lunch. I ended up with this salad/sandwich spread/dip that was surprisingly hard to stop eating. —allekas

Ingredients

  • 15 ounces

    chickpeas, one can drained


  • 1/3 cup

    cilantro leaves and small stems, chopped


  • 3

    scallions, choppsed


  • 1/2 teaspoon

    dijon mustard


  • 1 tablespoon

    mayonnaise


  • 1/2 teaspoon

    sumac


  • salt and pepper to taste

Directions
  1. Place all ingredients in a medium bowl. Smash until halfway between chunky and pasty – or to your liking. A potato masher works well.
  2. Serve as a salad, sandwich, or dip with tortilla chips.
