  • * 1 cup quinoa (uncooked) plus 1 1/2 cup water
  • * 1 15oz can chickpea
  • * 1 clove garlic, minced
  • * 1 1/2 cup chopped tomato
  • * 2 carrot, grated
  • * 1/2 zucchini, cut in strip or spiralized
  • * 3 cup broccoli, steamed
  • * 4 leaf of kale, shredded
  • * 1/2 cup apple,
  • * 1 bunch parsley, chopped
  • * 1 bunch cilantro, chopped
  • * 1/4 cup fresh basil, chopped
  • * 1/4 cup pumpkin seed, lightly toasted
  • * 1/4 cup sunflower seed, lightly toasted
  • dressing
  • * 1/4 cup olive oil
  • * 1/3 lemon, juiced
  • * 3 tb tamari
  • * 2 tsp dry oregano
  • * sea salt to taste
