Veggie Power Salad
Ingredients:
- * 1 cup quinoa (uncooked) plus 1 1/2 cup water
- * 1 15oz can chickpea
- * 1 clove garlic, minced
- * 1 1/2 cup chopped tomato
- * 2 carrot, grated
- * 1/2 zucchini, cut in strip or spiralized
- * 3 cup broccoli, steamed
- * 4 leaf of kale, shredded
- * 1/2 cup apple,
- * 1 bunch parsley, chopped
- * 1 bunch cilantro, chopped
- * 1/4 cup fresh basil, chopped
- * 1/4 cup pumpkin seed, lightly toasted
- * 1/4 cup sunflower seed, lightly toasted
- dressing
- * 1/4 cup olive oil
- * 1/3 lemon, juiced
- * 3 tb tamari
- * 2 tsp dry oregano
- * sea salt to taste
