Very Easy Pea Soup
Ingredients:
- 1 tbsp olive oil
- 1 clove garlic, minced
- 2 x scallions, finely sliced
- 4 cup (20 oz) frozen peas
- 1/2 – 1 cube vegetable bouillon, or 3 cups hot vegetable broth
- A piece of rind from a wheel of Parmigiano-Reggiano cheese, about 1 by 2 inches
